Description
Duck eggs are the well-kept secret of home bakers. They run bigger than a chicken egg, the yolk sits richer and deeper in color, and the extra protein and fat in a duck egg makes a cake rise higher and a custard set silkier. If you have never baked with one, it is worth trying at least once, even if just for the difference in a batch of biscuits.
Our small duck flock free-ranges alongside the chickens, so they get the same bugs, greens, and sunshine every day. Duck eggs also carry a thicker shell and membrane than a chicken egg, which means they naturally keep a little longer once they are in your fridge.
Pick your size
Choose a half dozen or a full dozen above. We keep the duck flock smaller than the chickens, so duck eggs move quickly, especially with our regulars who bake.
Good to know: Eggs ship in cushioned cartons within a day or two of gathering, or pick up fresh at the farm if you are local. Refrigerate on arrival.
