Ingredients:

  • 6 bell peppers (any color, y’all pick your favorites)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup black beans, rinsed and drained
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 1/4 cup chopped fresh parsley (optional, for a little fancy touch)

Instructions:

  1. Prepare the Bell Peppers:
    • Preheat your oven to a cozy 375°F (190°C).
    • Slice the tops off those bell peppers and scoop out the seeds and membranes. Make ’em ready to hold all that goodness.
    • Place the bell peppers upright in a baking dish. If they’re wobblin’ around, trim a bit off the bottom to make them stand tall.
  2. Cook the Filling:
    • In a large skillet, brown that ground beef or turkey over medium heat. Once it’s lookin’ good, drain any excess fat.
    • Toss in the chopped onion and garlic, and cook until the onion is as sweet as a summer day.
    • Stir in the cooked rice, diced tomatoes, corn, black beans, Worcestershire sauce, dried thyme, dried oregano, salt, and pepper. Mix it all up like you’re havin’ a jamboree in your skillet.
    • Take the skillet off the heat and stir in half of the shredded cheddar cheese. Oh, it’s gettin’ cheesy now!
  3. Stuff the Peppers:
    • Fill each bell pepper with that scrumptious mixture, packin’ it in nice and tight.
    • Pour the marinara sauce over the stuffed peppers and into the bottom of the baking dish. Give those peppers a cozy bath in sauce.
  4. Bake:
    • Cover the baking dish with aluminum foil and pop it into the oven for 30 minutes.
    • Remove the foil, sprinkle the rest of that cheddar cheese on top, and bake for another 10-15 minutes, until the peppers are tender and the cheese is melted and bubbly. Oh yeah!
  5. Serve:
    • Let the stuffed bell peppers cool for a spell before serving.
    • Garnish with chopped fresh parsley if you wanna get a little fancy.
